This linguine & scallops dish is currently on our summer menu. It has been one of the most popular dishes since it made it’s menu debut about 3 years ago. Although this dish can lean towards an Italian flavor profile, we make ours with a Spanish focus; achieving this through the addition of chorizo sausage. Chorizo adds a depth to the dish that takes it to a completely different place.

Scallops are so sweet and delicate that it compliments the pork sausage very well. When making this particular dish, we always cook the chorizo first, add the scallops and quickly hit it with a little butter and crisp white wine. This tones down the intensity of the chorizo while also highlighting the scallops sweetness. Butter is always added to round out the mouth feel and tighten up the sauce.

Chorizo is full of flavor and you can actually make a simplified version of it yourself at home. Below I shared a pantry friendly version of the sausage.

After combing all of the ingredients and the pork together for about 5 minutes, wrap in plastic and let rest in refrigerator overnight.

  • 1 pound ground pork
  • 2 tsp ground cinnamon
  • 2 tsp ground all spice
  • 2 tsp granulated garlic
  • 1 tsp cayenne pepper
  • 1 tbsp paprika
  • 1 cup cilantro leaves blended into a paste
  • 2 tsp salt
  • 1tsp black pepper

You can cook this up the same way you would ground pork, adding it to pasta dishes, rice or a few crumbles on top of potato.
