Maple Mustard Chicken

Today I wanted to share a recipe for my maple, mustard chicken. Peak autumn is the inspiration of this dish, in the midst of Oktoberfest activities, fresh maple syrup now available and produce perfect for baking, maple mustard chicken is sure to become a fall weeknight favorite.

This dish takes on the bold flavors of the season and goes great with with a crisp wheat beer, English pale ale, pilsner, cider, or chardonnay. I served it with quinoa, roasted squash, and kale. You could serve this dish with potatoes or on top of salad.

Maple Mustard Baked Chicken

Ingredients

  • 1/4 cup olive oil
  • 1/4 cup of yellow mustard
  • 1/4 cup whole grain Dijon( or regular dijon)
  • 1/4 cup pure maple syrup
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 2 tsp garlic powder
  • 1 tsp onion powder
  • 8 chicken cutlets

Method of Preparation

  1. Whisk together olive oil, yellow mustard, dijon mustard, salt, pepper, garlic and onion powders and maple syrup.
  2. Bathe chicken in mustard mixture and marinate for 1 hour.
  3. Bake in a 400 degree F oven for 18-25 minutes.

That’s it! Super simple recipe that makes a delicious weeknight meal.
