Step 1 – Select your cheese. This step is crucial depending on what you are making and who it is for will determine the cheese you select.

Step 2 – Make a roux. Take a half a stick of butter and melt it in a pot. Next add about 1/4 cup of flour or more if needed and cook the flour with the melted butter. After about 2 or 3 minutes of cooking slowly, start to whisk in about 2 cups of milk (heavy cream works also). Add salt and pepper. Next add in your selected shredded cheese and gently whisk until combined. If you want to loosen your sauce, just add more milk.
